Favourite Veggie Series: Cauliflower

Who knew cauliflower was so versatile? I would eat cauliflower similar to how  you would eat broccoli. I really do love it. I love these healthy cauliflower variations from the traditional format of the recipes.

Cauliflower is very low in calories and very high in vitamins. Cauliflower contains almost every  vitamin and mineral that you need.

  • Calories: 25
  • Fiber: 3 grams
  • Vitamin C: 77% of the RDI
  • Vitamin K: 20% of the RDI
  • Vitamin B6: 11% of the RDI
  • Folate: 14% of the RDI
  • Pantothenic acid: 7% of the RDI
  • Potassium: 9% of the RDI
  • Manganese: 8% of the RDI
  • Magnesium: 4% of the RDI
  • Phosphorus: 4% of the RDI

Cauliflower is high in fibre, in one cup of cauliflower there’s 3g of fibre, is a good source of antioxidants, may aid in weight loss, high in choline, rich in sulforaphane – a type of antioxidant, low-carb alternative for grains and legumes.
