Bacon & Cheddar Omelette Waffle (Dairy-Free)

I know what you may be thinking, a omelette waffle? What? You use the same ingredients that you would use to make a fritatta or an omelette, except this time you place the egg mixture into the waffle iron. With my waffle iron, when the light turns green the waffle is ready.

Eggs: I used 2 eggs, scrambling them in a small bowl.

Milk: I used un-sweetned almond vanilla milk. You can use regular milk)

I didn’t have much on hand, so I used what I had on hand. I had bacon and cheese; cheddar and parmesan-riggiano.

Red Pepper Flakes: I always had red pepper flakes to my eggs, unless I use a recipe that doesn’t require this spice. Like quiche.

I gotta say, the omelette waffle was very good!! I hope you enjoy it!
