Hi, lovelies! Meat isn’t high in protein. It is high in carbs, though. So, which foods should we consume, so we have our intake of protein?

Vegan Lentil Burgers

Lentils
Oh, yes. Yes! Lentils. Oh, hello, veggie burger! In addition, these legumes are high in fibre and low in calories. In addition to lentil veggie burgers, there is another dish that is just as yummy, lentil Shephard’s Pie, like the one in Jillian Harris’ and Tori Wessner’s best-selling cook-book!

Chickpeas
These beans are so versatile, they can be used in the ever so popular hummus, but these little guys can also be used in one of my favourite salad recipes, Rainbow Quinoa Salad that also contains chickpeas. Soups, roast them for a tasty snack. High in fibre, potassium, B vitamins, iron, magnesium, and selenium. Here are a dozens more recipes that aren’t hummus for you to cook up with chickpeas.

Peanuts
The ever so popular peanut butter & jelly, Thai dishes and peanut butter dessert recipes. High in protein, as long as you purchase peanut butter that’s organic, with no additives.

Black beans
In addition, to black beans being high in protein, they are high in fibre and potassium. Super delicious the beans are that are commonly used in quesadillas, black bean enchiladas and black bean burgers.

Wild Rice
Walk on the wild side with this kind of rice, that is super high in protein, un-like other types of rice. Its slightly chewy texture and nutty flavor is delicious.

Chia Seeds
Chia seeds are little, but oh are they mighty! So much goodness packed into a little seed. It contains omega-3. I love making chia seed pudding, like this one from Giada de Laurentiis.

Quinoa
Quinoa is a popular high-protein legume, often used in plant-based recipes. I love cooking quinoa in chicken broth or vegetable broth. It gives it so much more flavour. Some recipes I like are, Power Rainbow High-Protein Salad, that is perfect for Summer, quinoa as a veggie burger, quinoa crust for quiche, and so much more. It’s so versatile.

Stacey
